The Breakfast Bagel

No matter how hard I try or how committed I am to getting lean I just can't help but crave bread.....it's my ultimate guilty pleasure. Rather than reaching for thick crusty bread toasted with tonnes of butter and jam I've been opting for a somewhat healthier alternative recently that still fulfils my cravings whilst being able to get in some protein and vitamins at the same time. 
Meet my favourite breakfast bagel, it is simple but super tasty and is a
perfect weekend brunch option. 
Y O U  W I L L  N E E D

Bagel (I opted for seeded)
2 eggs
Handful of Spinach
Baby tomatoes
Red Pepper
Halloumi Cheese
Salt
Avocado spread
(You can use butter or olive oil too)

Firstly you have to prepare as the cooking time is pretty damn quick. Crack your eggs into a bowl and whisk them with a fork ready for scrambling. Next slice your baby tomatoes into quarters and pepper into small pieces followed by slicing however much Halloumi you want.

Slice your bagel in half and place under the grill alongside your slices of Halloumi to toast them whilst you cook everything else.

Throw a nugget of avocado spread (my new favourite thing to use instead of butter) into a frying pan, add your tomatoes and pepper and fry them on a gentle heat until they start to go tender then pop these to one side but If you're after your peppers to go a lot softer then cook them on their own first for longer.
F O U R 
In a separate pan, scramble your eggs and just before you're finished throw in the peppers and tomatoes followed by the spinach and a pinch of salt. As soon as the spinach has wilted, give everything a big mix or toss in the pan and set aside. By this point both your bagel and Halloumi should be fully toasted and ready to build, I sometimes add a tiny bit of Philadelphia spread to the base of my bagel before loading on the mixture and then finish it off with the Halloumi pieces.

And that is breakfast done right in my household.
