Banana + Blueberry Muffins.


Breakfast muffins are my favourite kind of muffins but I know that having a dose of cake first thing isn’t always the best but these guys seem to hit the spot when it comes to my sweet tooth.

The Ingredients.

  • 300g Self Raising Flour

  • 1 tsp Bicarb’ of Soda

  • 120g Soft Brown Sugar

  • 50g Oats

  • 3 Medium Bananas

  • 290ml Buttermilk

  • 5 tbsp Olive Oil

  • 2 egg whites

  • 150g Blueberries

  • If you’re feeling a little wild, add a scoop of chocolate chips too.

Let’s get baking.

  1. Let your oven heat up at Gas Mark 4 and line a 12-hole tin with muffin cases.

  2. Mix the flour + bicarb’ of soda + sugar (save 1 tsp of sugar) + oats together in a bowl. Make a well in the middle.

  3. In a separate bowl, mash the bananas with the buttermilk + oil + egg whites and stir until entirely smooth.

  4. Pour half of the liquid mixture into the dry well and give it a quick stir, add the second half and mix. Throw in the blueberries and stir gently to avoid bursting the berries.

  5. Divide the mixture and fill the muffin cases until they are quite full.

  6. Sprinkle each muffin with a little sugar + oats

  7. Bake for 18 - 20 minutes until golden brown and allow to cool.
